Baked Fish Parcels

Want something nourishing for dinner but no time or energy to cook? I’ve got just the ideal recipe for you!

This dish is ready from fridge to table in about 20 minutes and is my go-to meal for those days when I just don’t have it in me to slave over a stove.

All you need are 5 main ingredients which most likely would already be in your kitchen: 200-300g firm fish, pre-cut and deboned - any type works but my personal favourites are tilapia, sole and cod; 1 piece lemon - juice half and slice the other half into rings; 1-2 tsps (or to taste) minced garlic - I keep a jar in my fridge preserved in oil - it’s very convenient to toss into anything from stir-fries to bakes, such as this one; 1-2 tablespoons butter; veggies - anything you like but I find that asparagus, broccolini and zucchini are the best options; and lastly, herbs and spices of your choice - simple salt and pepper are sufficient but adding a bit of onion powder, parsley and dill elevates the flavours to a whole new level. Don’t be scared to experiment with whatever is in your cupboard, be adventurous. 

Now you’re ready to “cook.”

Preheat oven to 180C. On a piece of baking paper or aluminium foil (big enough to envelope your fish), rub the fish with your preferred herbs and spices, squeeze half a lemon juice all over, place the butter, garlic and lemon slices and veggies on top, seal the parcel by twisting the sides (sort of like how hard candy is usually wrapped) and leave a small opening on top, for the steam to escape...and voila! You’re all set. 

Place the parcel/s on your baking tray and pop in the oven for 12 minutes and that’s it, your dinner is ready (main picture). You can add prawns and scallops in the mix if you like which I sometimes do for a more decadent seafood feast!

It’s delicious, filling, healthy and ready in a jiffy - perfect for those of us who are always busy.
